Peach Crostata

Have you ever eaten a peach crostata? Crostata is a sweet cake with a crispy exterior. It is usually filled with some type of fruit preparation, with a texture similar to that of flan, although there are also salty crostatas, stuffed with tuna or legumes, for example.

Either way, the flavor and textures of this dish will leave you wanting more. Here we show you  how to prepare a peach crostata step by step. Try it, you will love it!

Peach crostata step by step

lemon cream crostata

Ingredients

  • 450 gr of sugar
  • 1/2 tablespoon baking powder
  • 200 g of flour
  • 60g cold butter
  • 6 large eggs
  • juice of 1 lemon
  • eggs
  • 1 pinch of salt
  • 1 can of peaches in syrup
  • 100 ml of water

Preparation of the dough

  1. Sift the flour, 300 grams of sugar and baking powder into a deep bowl, mixing all the ingredients well.
  2. Cut the butter into cubes and add it along with the salt. To incorporate the butter to the powders it is better to help yourself with a fork. In this way, as you break up the butter, it will join with the flour.
  3. You must continue mixing until everything is well incorporated.
  4. Beat one of the eggs in a small bowl and add it to the previous mixture. Remember to stir, but not knead.
  5. Later, you should keep the dough in the fridge for at least 15 minutes or until it takes consistency.
  6. Once it has taken shape, knead it briefly and stretch it.
  7. Divide the dough into two parts.  Line the base of a cake container with one part and reserve the other.
  8. Do not forget to prick the dough with a fork so that it does not rise and reserve it for later use.
  9. Before moving on to the filling, you must preheat the oven to 180 ° C.

Preparation of the filling

  1. Heat the water over medium heat.
  2. Cut half of the peaches into small squares and add them to the water along with the lemon juice.
  3. Take the opportunity to dissolve the 150 grams of sugar that you have left over.
  4. Put the syrup that comes with the peach in this mixture, let it lose a little liquid and stir frequently until it thickens.
  5. Once it has thickened, remove the mixture from the heat. Let it cool down a bit and remove the peach chunks.

Assembling the peach crostata

  1. Pour the syrup on top of the dough that we have prepared before, covering it well.
  2. You can cut peach slices and put them inside to accompany the syrup.
  3. Take the ball of dough that you have reserved and roll it out with the help of a rolling pin until it is about a centimeter thick.
  4. Now cut strips about two centimeters wide and arrange them on the mold forming a grid.
  5. If you want it to be shiny, you can brush it on using egg white. Sprinkle with sugar.
  6. Once you finish the rack, you can put the mold in the oven and let it cook for at least 40 minutes or until the dough is golden brown.
  7. When you see that it has browned, remove the peach crostata from the oven and  let it cool completely before unmolding.
  8. Afterwards, you can take it to the table to serve as a dessert.

Additional tips

  • The reason why we recommend not kneading this mixture when you add the egg is because it would make it lose its texture and it would not help us to make the crostata.
  • Remember to seal the edges of the strips that form the grid with the dough that protrudes from the bottom of the mold.
  • It will be much better sealed if you use a fork to even the dough.
  • If you want to save time, you can use shortcrust dough that they sell in the supermarket, although the one we propose is not very difficult to prepare.
  • A good way to know that your dessert is ready will be when you see that  the grate is golden, while the syrup is bubbling inside.
