Ingredients

  • 400 g of semi-bitter chocolate (2 cups).
  • 150 g of butter (1 cup).
  • 50 grams of chocolate (70% cocoa).

  • 2 g (1/4 tablespoon) cream of tartar.
  • Icing sugar (to taste)

When it comes to cream of tartar, this term may sound weird to you unless you’re a pastry expert. Also, if we say that “tartar” is the common name of the compound “potassium bitartrate” it probably will not help. The truth is that the product can be bought in any specialized bakery.

If you can’t find it, you can substitute it with the same amount of mild vinegar or lemon juice.

Preparation

  • Preheat the oven to 180ÂșC.
  • While the oven is preheating, use aluminum foil to cover your cake pan. Grease it with butter and sprinkle it all with flour.
  • Place the bittersweet chocolate and butter in a small saucepan and melt them over low heat. Here we are preparing the chocolate truffle.
  • Transfer this mixture to a larger container.
  • Separate the yolks from the egg whites. Beat the yolks in another bowl for about 8 minutes and add to the chocolate and butter mixture.
  • Beat the egg whites together with the cream of tartar until stiff.
  • Little by little, pour the egg whites together with the chocolate mixture, mixing them very well.
  • We already have our mix; now deposit it in the mold that you prepared previously. Bake this mixture for 30 minutes.
  • Remove from the oven after the 30 minutes have passed. Don’t worry about the cake looking runny; It will harden when you cool it for several hours.
  • Refrigerate the cake for at least 24 consecutive hours.
  • To separate the cake from the pan, dip a knife in hot water and then run around the edges of the pan to separate the cake.
  • Decorate your cake with icing sugar.
