  • Grate the Parmesan cheese on top and mix a little more.
  • Using your hand or a spoon, make balls of meatballs.
  • Pass each ball through flour.
  • Heat olive oil in a frying pan and fry the balls until they are golden brown.
  • Place one by one on an absorbent paper to remove the oil.
  • Serve with tomato sauce on top. You can accompany for example with mashed potatoes or white rice.

  • 100 grams of grated Parmesan cheese.
  • 100 grams of cream cheese.
  • 2 eggs
  • Garlic and parsley, chopped to taste.
  • Salt and pepper to taste.
  • 1 can of crushed tomatoes.
  • 50 grams of olive oil.
  • 1 onion.
  • 1 clove garlic.
  • 1 carrot
  • 2 tablespoons of sugar
  • 1 bay leaf.

  • Cut the onion, the peeled carrot and the garlic.
  • Sauté with oil in a pan and add the tomato, sugar, salt and bay leaf.
  • In a bowl, mix the meat, salt and pepper, parsley and garlic, eggs and cheeses (both grated).
  • Knead well to make the meatballs, like balls.
  • Fry the meat and cheese balls in hot oil, until golden brown.
  • Remove excess oil with absorbent paper.
  • Arrange on a tray and pour the tomato sauce on top.

    Who said vegetarians can’t eat meatballs? This recipe of Italian origin is not only delicious, but it is also suitable for those who do not eat meat. You can do the same with another vegetable, instead of using eggplant, for example, carrot or zucchini.

    The ingredients for the “polpette di melanzane” are

    • 100 grams of Parmesan cheese.
    • 200 grams of aubergines.
    • 2 cloves of garlic
    • 100 grams of breadcrumbs (it can also be oatmeal).
    • 1 egg.
    • Olive oil, necessary quantity.
    • Optional sauce (sour yogurt or tomato sauce).

    • Grate the Parmesan cheese well and reserve.
    • Cut the eggplant into large chunks (unpeeled).
    • Put the garlic cloves cut in half and 50 ml of olive oil into the glass of the mincer or shredder.
    • Blend until you have a paste.
    • Add the grated cheese, egg and breadcrumbs and continue mixing, until the dough is ready for the meatballs.
    • With your hands or a spoon, assemble the balls according to the size you like.
    • Heat oil in a frying pan and sauté until golden brown on both sides.
