Unsweetened Oatmeal and Yogurt Cookies

Cookies are a classic. There are sweet, filled, simple … They cannot be missing at home and are ideal to accompany afternoon coffee or sweeten breakfast.

However, the recipe that we propose does not include any type of sweetener, so we are talking about a very different type of cookies from the one you are probably used to. For this reason, we offer you two recipes: one that does not include sweetener and another in which, among its ingredients, is honey.

However, both are so nutritious as they are made from oatmeal and yogurt that they are a healthy option, no matter where you look at it. Do not miss it!

First recipe: oatmeal cookies and unsweetened yogurt

Oatmeal Cookies

Ingredients

  • 200 g of rolled oats
  • 4 eggs
  • 1 pinch of salt
  • 45 g of plain yogurt (make it thick)
  • A teaspoon of olive oil
  • A teaspoon of vanilla essence
  • cinnamon powder

Preparation

  • First, we preheat the oven to 180 ºC and, in the meantime, we can prepare our cookies.
  • In a bowl we mix the eggs with the vanilla and beat with a hand mixer. Then, little by little, we add the yogurt while we continue mixing. At this point, it is important to know that we must drain the yogurt well.
  • Later, we also add the oil and salt, and continue beating the mixture.
  • Then we add the oats and cinnamon and continue mixing. It should be a slightly liquid dough but it is possible to shape it.
  • Then, we grease a tray suitable for the oven and we take some of our dough to form the cookies. As it is a bit liquid, we will have to use a spoon and then shape them with the hand or with the spoon.
  • Finally, we put the tray in the oven and bake for 15 or 20 minutes until we see that they have browned.
  • When we take them out of the oven, we wait for them to cool down and…. We can already enjoy them!

Second recipe: oatmeal cookies and yogurt with honey

Oatmeal Cookies

Ingredients

  • 1 cup of plain yogurt
  • A cup of rolled oats
  • 1 cup of oatmeal
  • 3 tablespoons butter or vegetable margarine
  • 2 eggs
  • 1 teaspoon of baking powder
  • 5 tablespoons of honey

Preparation

  • First, we can put the oven to preheat to 200 ºC. Meanwhile, we prepare our cookies.
  • To do this, in a bowl we add the butter at room temperature and the honey, and we beat everything very well until it is a homogeneous mixture.
  • Next, we add the oats, flour and baking powder and continue mixing. If you wish, you can add cinnamon to give your cookies more aroma.
  • Then we add the cup of yogurt and the eggs. We mix very well until we have a homogeneous and uniform dough.
  • Then, we grease an oven-safe tray with butter and we take the mixture from the bowl to form the cookies. We place them in the tray separated from each other or, otherwise, they may stick together as they grow.
  • Finally, when we have shaped all the cookies, we put the tray in the oven and bake for about 20 minutes at 200 ºC.
  • Later, we take them out of the oven, let them cool and… Enjoy!

Some extras

  • You can also add chia seeds or any other seed to both recipes. In addition, especially in the second recipe, you can also include chopped nuts or even raisins, for example.
  • Keep in mind that these cookies will barely rise in the oven. Therefore, the finer the shape you give them, the crunchier they will be.
  • Although we offer you unflavored yogurts, you can also opt for a flavored yogurt that combines with oats so that your cookies are even tastier and to your liking.
  • On the other hand, if you prefer, you can shape them to be much larger and instead of cookies, get pancakes. Thus, you can add whatever you want (jam, cheese, etc.) on top and enjoy them in another way.

Finally, you should know that these cookies are ideal for breakfast, a snack, to snack between meals and, also, for the children’s lunch at school. Combine them with a good natural fruit juice and you will have a really important and delicious supply of nutrients.
