Ingredients

  • 3 eggs
  • ½ cup of stevia (75 g)
  • ½ cup of butter (100 g)
  • 1 cup of strawberries (150 g)
  • 3 tablespoons of unsweetened strawberry jam (60 g)
  • ½ cup of unsweetened whipped cream (125 ml)
  • ½ cup of wheat flour (60 g)
  • 2 tablespoons of vanilla essence (30 ml)
  • 1 baking pan

Preparation of the cake

  • The first thing you should do is preheat your oven to about 200 ºC.
  • Then, take the baking dish and spread a little butter and flour so that the mixture does not stick when baking.
  • Then, place the rest of the butter in a bowl and, with the help of an electric mixer, make a cream. Add the sweetener little by little until you get a homogeneous mixture.
  • Next, add the eggs, the wheat flour and a little vanilla extract and continue beating until the ingredients are properly incorporated.
  • You will notice that the mixture will get thick ; don’t worry, that’s the idea.
  • Pour the mixture into the previously floured mold and place it in the oven, at the same temperature as the preheated one, for about 25 to 30 minutes.

  • To start, mix the whipped cream with a little stevia and vanilla extract until it foams. Reservation.
  • Then, you must take the cake and cut it in half; With the help of a kitchen brush, varnish each part with the strawberry jam.
  • Next, put the cake back together and proceed to decorate it with the cream. Use a large putty knife for a better finish.
  • To finish, cut the strawberries in half and decorate the entire cake with them.

Additional tips

  • If you don’t want to use stevia as a sweetener for your cake, you can use honey but you will need a larger amount ; the recommended is 1 cup.
  • To make this gluten-free dessert, replace the wheat flour with an oatmeal flour and the eggs with three tablespoons of cornstarch.
  • You can also add some strawberries to the inside of the cake before decorating it.
  • To make the whipped cream yourself, you just have to mix skimmed cream with a little sweetener (other than sugar) and vanilla essence.
